Ingredients

  • 8 Oz Puff Corn
  • 1 Cup Salted Butter 1 Cup=2 Sticks of Butter
  • 1 Cup Brown Sugar
  • 1/2 Cup Light Corn Syrup
  • 1 Tsp Baking Soda
  • 1 Cup Salted Peanuts (Optional)

Method

  1. Begin by preheating your oven to 250 degrees Fahrenheit. Then, gather your ingredients and ensure that you have a large mixing bowl and a saucepan ready.
  2. If you choose to include peanuts in your Carmel Puff Corn, mix them with the puff corn in a large bowl. This step adds a delightful crunch and a hint of saltiness to the final product.
If you aren’t using Peanuts just put your puff corn in a large bowl.
  3. In a saucepan, melt the two sticks of salted butter over medium heat. Once melted, add the brown sugar and light corn syrup to the saucepan. Stir the mixture continuously until the ingredients are well combined and the mixture comes to a gentle boil.
  4. Once the mixture reaches a boil, allow to boil for two minutes, then remove the saucepan from the heat and carefully add the baking soda. Be prepared for the mixture to foam up slightly as the baking soda reacts with the other ingredients. Stir the mixture until the baking soda is fully incorporated.
  5. Pour the caramel sauce over the puff corn (and peanuts, if using) in the large mixing bowl. Use a spatula or spoon to gently toss the puff corn until it is evenly coated with the caramel sauce.
  6. Spread the coated puff corn onto a baking sheet, ensuring that it forms a single layer. If necessary, use two baking sheets to accommodate all of the puff corn. Place the baking sheet(s) in the preheated oven and bake the Carmel Puff Corn for 45 minutes, stirring every 15 minutes to ensure even baking and caramelization.
  7. Once the baking time is complete, remove the Carmel Puff Corn from the oven and allow it to cool completely on the baking sheet(s). As it cools, the caramel coating will harden, creating irresistible clusters of sweetness and crunch. Once cooled, transfer the Carmel Puff Corn to an airtight container or serve it immediately.

Notes

- Nut-Free Variation:
If allergies or preferences dictate, omit the peanuts from the recipe for a nut-free version of Carmel Puff Corn. The snack will still be equally delightful without the added crunch of peanuts.
- Flavor Enhancements:
Experiment with different flavor variations by adding extracts, spices, or other mix-ins to the caramel sauce. For example, a dash of vanilla extract or a sprinkle of cinnamon can add depth and complexity to the flavor profile.
- Creative Serving Ideas:
Carmel Puff Corn is not only delicious on its own but also makes a delightful addition to other treats. Consider incorporating it into homemade trail mix, sprinkling it over ice cream, or using it as a topping for yogurt or oatmeal.
